De Kuyper still makes many of its essences by means of extraction and distillation. With extraction, aromatic substances like those found in coffee, cocoa, vanilla, cloves and cinnamon are extracted using alcohol. With distillation, the volatile aromatic substances are harvested by distilling the raw material, such as lemon peel, bitter oranges or orange oil, with alcohol in a kettle. Other ingredients are added to the extracts and distillates, such as fruit (juice) concentrates, malt wine, eau-de-vie, cognac, kirsch, etc. to create the final product. Sugar syrup is always added to the liqueurs. The mixture is then left to rest for a while to allow the taste to mature. For the production of the Dutch egg liqueur called Advocaat, each year some forty million eggs are processed. The yolks are separated from the egg whites and mixed with grape brandy, sugar and vanilla. The liqueur is either stored in lager tanks or immediately bottled. For creams and cream liqueurs like pina colada, fresh cream is mixed with alcohol, sugar and essences. After processing, the products are left to rest and then bottled. In today’s assortment there are many products that did not exist a couple of years ago. Research & Development One method of product creation is researching new flavours of popular fruits or herbs from all over the world. However, a new flavour is not yet a new product: packaging, price, target group etc. have to be determined to make it a marketable product. That is why De Kuyper use with increasing frequency the so-called concepting method. First the product concept is developed: who will be the consumer, when and where will the product be consumed, how do we communicate with the target group etc. Then the flavour is determined which would best fit the new product concept. Over the years product development have resulted in over 70 different De Kuyper products, which are consumed in more than 100 countries.
